Corona Cookbook; Yorkshire Pudding Beef

One or Two Times a Month

YORKSHIRE PUDDING BEEF DISH

This is one of my favorite dishes. A friend gave it to me over 30 years ago and I have been making it at least 1 or 2 times a month ever since!

 

1lb ground beef

1 onion diced

1 cup mixed vegetables, can be left over veggies, but I often use a package of frozen mixed veggies, any combination of veggies work great

1 can whole cooked potatoes, dice them

1 jar beef gravy, after emptying the jar put about 3 tablespoons of water in, shake and add 

1 tablespoon Worcestershire sauce

½ to 1 teaspoon of thyme or an Italian mix is great also

2 tablespoons butter

1 cup milk

2 eggs

1 cup all purpose flour

¼ teaspoon salt

¼ teaspoon pepper

Another jar of gravy for serving with the meal.

Pre heat oven to 425

In a large skillet cook beef and onions til meat is brown, add veggies, potatoes, gravy and water, stir and add Worcestershire sauce and herbs, stir. In a 9-10in high sided baking dish place butter and put in oven. Meanwhile in small mixing bowl combine milk and eggs then add flour, salt and pepper. Beat til mixture is smooth. Remove dish from oven when butter is melted. Pour egg mixture into hot dish. Spoon meat mixture evenly into dish keeping it about 1 inch from the edge. Return to oven. Bake for 25-30 minutes til browned and puffed. Heat second jar of gravy to serve with the meal.

I often have doubled everything and baked it in a 10 x 12 or 9 x 13 pan if serving 5 or more people. If doubling I add 1 ½ jars of gravy into the mix and add the other ½ jar to the jar for serving.
